Update dependencies and prune stale overrides

Update React to 19.3 and Sanity, its plugins and styled-components to
their latest versions. Drop overrides that are no longer needed, and
fix the remaining ones that pinned vulnerable versions. Reduces npm
audit findings from 15 to 2; the remaining zod advisory comes from
sanity-plugin-media and has no fix yet.
